The juice is fermented for three weeks in temperature- controlled tanks. After settling, the wine is cold stabilized, filtered, and bottled under sterilized conditions, avoiding malolactic fermentation and preserving the fruit characteristics of the wine.
TOMTIT, SAUVIGNON BLANC, NEW ZEALAND
This lovely Sauvignon Blanc, from the famous region of Marlborough in New Zealand. The Tomtit has a lovely floral nose but much more subtle, tropical flavours like mango and passionfruit.A really fresh, wonderful fruit, crisp and juicy finish. The wine is manually harvested and then destemmed and pressing, followed by temperature-controlled fermentation.

This uses the full on champagne method not to be confused with the cheaper and half sparkling Frizzantes. The wines are vinified under cold pressure, thermostatic controlled in the steel vat and is taking place the champagne method for three months to give the wonderful bubbles and freshness.

ECHENOR, MALBEC 2019, ARGENTINA
A young, bright Malbec, this one will be great as a weeknight glass and will age into something more serious over the next few years. The acidity and tannins are smooth and well-integrated, its spicy and fruity on the palate, with notes of vanilla, cassis, and violet on the finish. One of the more popular grape varieties for wine lovers. The Malbec grapes are had picked and aged in tanks before bottling. It has a 10-day fermentation under cold temperature. Definitely one to add into the Build-A-Box!
DENIS MARCHAIS MERLOT 2019, FRANCE
The Marchais Merlot is from the Vineyards of Vin de Pays d’Oc, South of France in the very popular Languedoc-Roussillon Region. This Merlot is a gorgeous deep garnet red wine with a very long finish, silky and subtle tannins, basically a beautifully smooth Merlot. The grapes are harvested when ripe, destemmed crushed and then fermented for 6 to 12 days, wines are then gently pressed and racked filtered and bottled.
